Darjeeling update
This morning, I enjoyed another cup of first flush Darjeeling (see first post) and I sat down to write on a blog entry, and suddenly three and a half minutes had passed. Totally unacceptable, but this mistake taught me that three minutes probably is a better steeping time. I also waited longer, about one and a half minutes, after the water had boiled before I poured it on the leaves.
